Tres Leches Coconut Cake

Inma of la Galletika was our Sept. 2013 Daring Bakers’ hostess and WOW did she bring us something decadent and delicious! Pastel de Tres Leches or Three Milk Cake, creamy yet airy, super moist but not soggy.. just plain delish!

I’m not a big fan of the phrase “better late than never,” but here I am using it about the September Daring Bakers’ Challenge.

It’s been quite a busy and stressful string of weeks since I left you last — my roommate decided she wanted to move out, in turn meaning I would have to move out as well. That led to a vigorous apartment searching/packing/moving marathon.

But here I am in my new apartment, happy as can be. Maggie is super excited that I’ve placed a bunch of rugs throughout the apartment and loves rolling around on them. Her favorite is the faux sheepskin in my room. What doesn’t kill us makes us stronger.

I’m so excited to be cooking often again, in a modern, large-for-an-apartment-kitchen with what seems to be great natural and artificial light!

Back to the cake. I was delighted to find out that one of the recipes I’d pinned over a year ago was one suggested for this challenge. Two birds with one stone.

Tres Leches Coconut Cake

I pretty much used the recipe from The Pastry Affair as is, so I’m linking to it here, rather than posting. I did use Trader Joe’s Coconut Chips instead of plain flaked coconut because it was easier to find.
