S’mores Rice Krispies Treats

Last month, my good friend Lindsay got married!

We had a blast over Labor Day weekend in Las Vegas for her bachelorette party. One night we surprised Lindsay after dinner with tickets to see Britney Spears!

It was a really great show. No, she does not sing, yes, of course she is lip syncing the entire time, but after seeing the amount of nonstop dancing that goes into the show, I don’t blame her. Visually, it was very captivating, with Britney floating over the stage during “Lucky,” fire, rain, and flashy outfits, paired with bright backdrops and videos. Throughout most of the show we were constantly surprised at how many hits we forgot about.

Three weeks after Vegas, we flew to Pennsylvania for the wedding. The ceremony was outdoors next to a lake, while the reception was held in a barn. Afterwards, there was a campfire and everyone made s’mores. I’d had this idea for s’mores Rice Krispies treats beforehand, and a night of s’mores with friends solidified the concept.

Rice Krispies treats were always one of my favorite snacks when I was really little. The packaged version in the snack aisle wasn’t being sold yet, but when those came out I was all for those too. But the homemade ones were always the best. The buttery flavor comes through so much better and sometimes they’re a little bit flimsy from too much butter (all the better).

These s’mores Rice Krispies treats have bits of graham cracker and chocolate throughout, and they’re topped with toasted marshmallows because that’s my favorite part of a s’more.

I actually hate the chocolate part of a traditional s’more for two reasons 1. It’s usually Hershey’s chocolate and I hate Hershey’s, and 2. The chocolate is always only 0.0001% melted because the chocolate bar is too thick. I prefer fully melted chocolate on my s’more. Here, chocolate chips are carefully added so that they melt a bit, but not so much that they’re turning the entire treat brown. I mean, not that there’s anything wrong with that, I just thought they would look prettier and provide the chocolate-free areas that I enjoy.

Can you tell I’m not a huge chocolate fan?

S’mores Rice Krispie Treats

Ingredients

  • 6 cups Rice Krispies cereal
  • 10 graham cracker squares, broken into bite-sized pieces
  • 1/2 cup semisweet chocolate chips
  • 3 tablespoons butter
  • 10 oz large marshmallows, 7 marshmallows reserved

Spray a 9x13 pan with nonstick spray.

Mix together the rice krispies, graham crackers, and chocolate chips. Set aside.

In a large pot, melt the butter over low heat.

Add the marshmallows (except for the 7 reserved for later), and stir until melted.

Remove from heat and allow to cool for 1 minute.

Gradually, but quickly, stir the Rice Krispies mixture into the melted marshmallow. Some of the chocolate chips will begin to melt, but you also want a good amount to remain solid. The mixture will seem very dry and gooey.

Pour into the prepared pan and flatten with a spatula. Allow to set, 15 minutes.

Meanwhile, cut the reserved 7 marshmallows into quarters.

Place the marshmallow pieces evenly on top of the cooled Rice Krispie treats.

Using a broiler or creme brulee torch, carefully toast the top of each marshmallow until they're golden brown.

Allow to cool again, then cut into squares and serve.
